Banging burgers

One of my favorite activities is cooking with my friend Melina; we have a really similar taste for junk food so when we're hungover we make a pretty great team. Recently we decided to make burgers and boy oh boy were they tasty and 100% gluten free. 
Burgers are really easy to make and not too spenny either and went perfectly with our homemade chips, blue cheese sauce and guacamole- i'm salivating just thinking about it. For this post I'm going to include recipes for all four elements of this dish so you can make it at home!

For the Burgers you'll need:
- beef mince meat
- an onion (red or white)
- 3 cloves of garlic
- parsley
- one jalapeno chilli
- one red chilli
- smoked paprika
- garlic powder
- salt
- pepper
- cumin
- cheddar or American cheese
- one egg

For the blue cheese sauce:
- blue cheese (we used st.Agur)
- sour cream 
- balsamic vinegar 
- pepper

For the chips: 
- a big bottle of sunflower oil
- potatoes

For the guacamole:
- 2 avocados
- 2 cloves of garlic
- half a lemon
- olive oil
- salt
- pepper

Start with the chips by cutting the potatoes into match sticks and put them in a a deep saucepan. You then need to cover them with a fuck ton of sunflower oil. It will look pretty gross but trust me these are the best homemade chips ever. Turn the stove on at a low heat so that they can cook away nicely (they take around 40 mins). The trick with these chips is that you have to not touch them until the very end so that they cook all the way through and maintain their shape. 

While the chips are cooking you can start preparing your burger mix. Dice the onion and garlic and put in a large bowl with the mince meat. Add in your spices, salt, pepper parsley and chilli and mix together. Put the egg in at the end to bind the ingredients. A way to test if the flavor is good is by making a mini patty and frying it, then adding anything if it needs. 
Shape your burgers into balls and push your thumb into the middle to make a dip. Put a slice of cheese into the dip and cover with the meat, molding it to make a patty shape. Put olive oil into a frying pan and let the burgers fry on a low heat. Like the chips, it's important not to flip them or move them around too much too early as they need a chance to cook evenly. 

Now that you've got your burgers and chips on the go you can make the blue cheese sauce. This sauce is incredibly easy and so so moorish. Start by crumbling the blue cheese into a saucepan and melt on a low heat, stirring continuously. When it's melted stir in the sour cream. Season with pepper and splash in some balsamic vinegar. Adjust to taste. Turn the heat off and leave to cool so that the mixture can thicken. I would really recommend drenching your chips in this sauce, you will be hooked. 

For the guac, smash the avocados in a bowl. Squeeze in the lemon juice and a healthy glug of olive oil and mix till smooth. Finely chop the garlic and add in with salt and pepper and that's all there is to it! Guacamole is so simple and versatile and adds a freshness to this dinner. 

Keep checking on your burgers and when you think they're ready give them a flip. Your chips should start to look crispy and golden at this point. Put some kitchen paper on a plate and put a layer of the chips down pour over salt. You need to do it layer by layer so that all the chips are given a healthy (ha) amount of salt. 

Once the burgers are done you're ready to plate up. This meal will definitely hit the spot if you have a craving for burgers and chips and want to make them from scratch!

Recipe of the week: 5 less obvious essential ingredients

5 less obvious essential ingredients Rather than doing a recipe of the week this week I've decided to write a list of five ingredients that I think are absolute essentials and that aren't the classic salt, pepper or garlic! I think when cooking it's good to have an understanding of what flavors you really like and for those who are less confident it can be handy knowing about some other ingredients that are out there.
